I started making this for myself and very quickly my teenage kids caught on to just how delicious it is. In our house it’s known as “The Adrienne Special.” Depending on your preferences you can add cheese, sliced heirloom tomatoes (we do in the summer) smoked salmon or bacon.
SOURDOUGH AVOCADO TOAST WITH EVERYTHING BAGEL SEASONING
1 Serving
Ingredients:
- 1 Slice Sourdough bread toasted (or your bread of choice)
- 1 egg
- ½ ripe avocado
- Small handful of arugula or microgreens
- 2 tbsp Struesli Savory + Seed
- Sprinkle of everything but the bagel spice (must have!)
- Salt and pepper to taste
- Drizzle of olive oil
Instructions:
- Gather all of the ingredients so that you can assemble everything quickly once your egg is done cooking.
- While your bread is toasting, cook the egg in a small frying pan to your desired preference. I like mine cooked over easy (good and messy) . My kids like the yolk cooked through so I break the yolk with my spatula before I flip it in the frying pan.
- With a fork, scoop out the avocado and mash it onto your toast, sprinkle it with everything but the bagel seasoning and Savory + Seed.
- Next top with arugula, then drizzle with olive oil, salt and pepper, and place your egg on top.
- Enjoy!
