These snack energy bites are a favorite of mine. Don't leave out the fresh orange zest! The almond and orange combo is a perfect flavor match. They are the perfect pick-me-up to have in the refrigerator. They are packed with flavor, gluten-free, refined sugar-free, and so satisfying.
Quick & Easy Superfood Bliss Bites With Orange and Almonds
Total time: 15 minutes
12-14 Bliss Bites
Ingredients:
- 1 ½ cups Struesli Original
- 2 Medjool dates, softened in warm water
- ¼ tsp almond extract
- ¼ cup raw almond butter
- ½ tsp grated orange zest
- 2 tbsp mini chocolate chips (we like Enjoy Life)
Instructions:
1. Place all of the ingredients in a food processor bowl. Process until the ingredients are combined and blended to a consistency similar to that of cookie dough. There should be some texture, don't over-process or all the natural oils will start to emerge.
2. Use your hands to shape the mixture into 12-14 balls, 1 ½ to 2 tablespoons each. Store in the fridge for when you want to serve them, or enjoy them right away!
Tip: Store in the refrigerator for up to a week.
