
This is a great multi-purpose, gluten-free, and grain-free bread. It’s delicious on its own as a partner for soup or a salad but equally amazing sliced and toasted with a pat of butter and jam. It’s not heavy or too dense, and the Savory + Seed granola gives it a nice, toasty crunch and flavor that goes with everything.
Grain-Free Bread With Nourishing Superfood Seed Topper
1 8 Inch X 4 Inch loaf
Total time: 40 minutes
Ingredients:
- 1 ½ cup blanched almond flour
- ½ cup tapioca flour
- ½ tsp baking soda
- ½ tsp kosher salt
- 3 eggs
- ½ cup plain unsweetened yogurt
- ¼ cup unsalted butter melted and slightly cooled
- 1 tsp honey
- 5 tbsp Struesli Savory + Seed
- Avocado oil spray
Instructions:
1. Preheat the oven to 350. Spray the 8-inch x 4-inch loaf pan with avocado spray.
2. In a large mixing bowl, blend the almond flour, tapioca flour, baking soda, and salt.
3. Crack the eggs into a small bowl to avoid shells in the mixture and whisk with a fork to break them up, then pour the eggs into the dry ingredients. Follow with the yogurt, butter, honey and stir to combine.
4. Pour the batter into the loaf pan and top with the Struesli Savory + Seed granola. With the back of the spoon press the granola into the batter to nestle it in the top but not submerged in the batter.
5. Bake on the middle rack and bake for about 30 minutes or until golden and a toothpick inserted in the center of the loaf comes out clean.
Tip: You can pre-slice and store in a sealed container in the freezer. That way, you can toast a slice or two as you need. Alternatively, keep it in the refrigerator for up to 5 days.
