NOURISHING CHIA PUDDING WITH CACAO AND COFFEE GRANOLA
Chia Pudding Prep time: 5 minutes + 8 hours overnight
Assembly time: Roughly 10 minutes

Ingredients:
- 3 tbsp chia seeds
- 2 tbsp hemp hearts
- 1 cup milk of choice (unsweetened)
- 1 tsp vanilla extract
- Pinch of salt
- ½ cup diced orange segments
- ½ cup diced strawberries
- ¼ cup dark chocolate chips (enjoy life brand)
- ½ tsp coconut oil
- 2 tbsp Struesli Cacao + Coffee
Instructions:
1. In a large measuring cup, whisk together the chia seeds, hemp hearts, milk, vanilla, and salt. Refrigerate the mixture overnight to thicken the consistency.
2. To serve, divide the orange segments and diced strawberries between two wide-mouthed juice glasses. Top with the thickened chia pudding.
3. In a microwave-safe bowl, melt the chocolate and coconut oil together in a microwave in 20-second intervals (pause the microwave every 20 seconds, take out the bowl and stir the mixture until completely smooth). Pour the melted chocolate in a thin layer over the chia pudding, and spread it evenly.
4. Top the melted (and still soft) chocolate in each glass with one tablespoon of Struesli Cacao + Coffee, pressing it down gently into the chocolate. Refrigerate for 20 minutes to set the chocolate shell.
