Sweet Potato Toasts with Whipped Feta And Savory Granola

Ingredients:
- 2 medium – large sweet potatoes
- Avocado Oil Spray
- Kosher or fine sea salt
- Freshly ground black pepper
- 1 (8-ounce) block feta cheese in brine, drained
- ¾ cup Greek or dairy-free yogurt
- 2 tablespoons olive oil
- Struesli Savory & Seed granola
- Microgreens

Instructions:
- Preheat the air fryer at 400°F for 3 minutes.
- Cut sweet potato into ¼ inch slices. Spray each piece of sweet potato with a small amount of oil. Spread the slices evenly in the air fryer basket, with no overlap.
- Air fry for 6 minutes, then flip and air fry for another 5-6 min. Cooking time may vary based on the air fryer. Your sweet potato should be lightly browned but not burned on the edges. Sprinkle it with salt and pepper.
- In the bowl of a large food processor fitted with the steel blade, combine the feta and yogurt. Blend, and while the processor is running, drizzle olive oil through the top opening, until the feta is whipped to a smooth mixture. Set aside.
- Spread some whipped feta on each sweet potato toast and top with Struesli Savory & Seed granola, microgreens, and pomegranate seeds.
