If you love avocado toast then you will really love this version with the added protein from the jammy egg and satisfying crunch from the Savory + Seed granola.
Sourdough Avocado Toast With Jammy Eggs and Microgreens
1 Serving
Ingredients:
- 2 slices of sourdough bread toasted (or use any bread you like)
- 2 boiled eggs (7 minutes for jammy yolks)
- 2 tablespoons of Struesli Savory + Seed
- 1 small sliced avocado
- 1 handful of microgreens
- Red pepper flakes (optional)
- Drizzle of olive oil
Instructions:
- Use a spoon to lower 2 eggs into a small pot of boiling water, and set your timer for 7 minutes.
- Prepare a bowl of ice water. Once the timer goes off use a slotted spoon to transfer the eggs to the ice bath for 3 minutes.
- This is a good time to start your toast and slice the avocado.
- After 3 minutes peel your eggs and cut them in half.
- Assemble your toast with sliced avocado, jammy eggs, microgreens, Savory + Seed, optional red pepper flakes and a drizzle of olive oil.
- Enjoy!
