Gluten-Free Bliss Bites Packed With Tropical Superfoods

Ingredients:
- 1 ½ cups Struesli Cashew & Vanilla granola
- ½ cup unsweetened shredded coconut, plus extra for rolling
- ¼ cup raw cashews
- ½ cup dried pineapple (unsweetened, roughly chopped)
- ¼ cup dried mango (unsweetened, roughly chopped)
- 2 tablespoons coconut oil, melted
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- Pinch of sea salt
Instructions:
- In a food processor, combine the Struesli Cashew & Vanilla Granola, ½ cup shredded coconut, and cashews. Pulse until the mixture forms a coarse crumb.
- Add dried pineapple, dried mango, coconut oil, maple syrup, vanilla extract, and a pinch of salt. Pulse again until the mixture comes together and starts to clump.
- Scoop out about 1 tablespoon of the mixture at a time and roll into balls. If the mixture feels too dry, add a teaspoon or two of warm water until it holds together easily.
- Roll each bite in shredded coconut. Refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 3 months.
