Elevated, Easy Granola Cups With Fruits And Yogurt

8 Granola Cups
1 Cup of Date Paste
Granola Cups Ingredients:
- 1 ½ cups Struesli Cacao + Coffee
- ⅓ cup date paste
- Coconut oil or avocado oil for muffin pan
- Yogurt of choice for filling
- Optional: Berries or diced fruit of choice, melted chocolate or nut butter to drizzle on top.
Date Paste Ingredients:
- 1 cup (about 12 pieces) pitted dates
- 1 cup boiling water
- Pinch of salt
- ¼ tsp vanilla powder or tsp vanilla extract
- 1/4 tsp cinnamon
- ½ tsp fresh lemon juice

Date Paste Instructions:
1. In a large glass measuring cup or heat-proof bowl, add the pitted dates and pour the boiling water over them. Allow them to soften for about 15 minutes. (Be sure you removed all the pits.)
2. Add the dates, soaking water, salt, vanilla, cinnamon, and lemon juice to a high-speed blender. Blend until combined and smooth.
3. Empty contents into a storage container with a lid and keep in the fridge for up to 1 month or in the freezer for up to 3 months.
Granola Cups Instructions:
1. Preheat the oven to 350 degrees and lightly grease 8 muffin cups in your muffin pan with the oil.
2. Mix the date paste and the Struesli Cacao + Coffee in a medium-sized bowl until the granola is well coated. Distribute the mixture between the 8 cups, about 3 tbsp per cup. Pressing against the sides creates a well in the center, like a cup.
3. Bake for 12-15 minutes. The edges will get a little darker and crispy. Allow to cool, and then loosen the edges from the pan with a pairing knife and move to a plate.
4. Fill them with yogurt and fruit and enjoy right away. The longer they sit, the more the yogurt's moisture will start to soften the granola.
Tips: Store any unfilled cups in an airtight container for up to 5 days to customize and enjoy another day.
