CRISPY NO-FRY CHICKEN WITH SEED-BASED GRANOLA

Ingredients:
- 6 thin chicken breast cutlets (about 2lbs)
- 2 eggs
- 2 cups Struesli Savory + Seed
- ⅓ cup tapioca starch
- ¼ tsp dried garlic powder
- ¼ tsp dried oregano
- 1/4tsp kosher salt
- Fresh cracked black pepper to taste

Instructions:
1. Preheat your oven to 425 and set a metal rack on top of a large baking sheet lined with parchment. The rack allows the heat to circulate under the chicken and keep the bottom from becoming soggy.
2. Gather three medium-sized bowls: You will create an assembly line to dredge the chicken.
- Bowl 1: Add tapioca starch.
- Bowl 2: Crack and whisk the eggs.
- Bowl 3: Add Struesli Savory + Seed.
3. Lay the chicken on a large plate and season both sides with the salt, pepper, garlic powder and oregano.
4. Coat each piece of chicken in the tapioca starch (be careful it’s powdery) at a time and do your best to remove excess, then dredge each piece in the egg and lastly in the Struesli granola. Don’t be afraid to firmly press the granola onto the chicken to help it stick.
5. Place each piece on the baking sheet with the metal rack and once all the chicken is coated, spray lightly with avocado oil and bake for 12-15 minutes or until the internal temperature reaches 165 degrees.
Tip: Best eaten immediately after cooking as the coating is crisp. Store any leftovers in an airtight container in the refrigerator for up to 4 days. You can reheat in a toaster oven, air fryer or conventional oven according to your preference.
