When it comes to egg salad there are endless, delicious possibilities! It all comes down to your individual preference and what you’re craving. Sometimes I like mine packed with veggies and super crunchy, sometimes I keep things simple (like this nut-free recipe) so that I can layer flavor and texture by adding Struesli.
HOW TO MAKE EGG SALAD
Cooking Time: 35 minutes
Yields 1 ⅓ cup
4 servings
Ingredients:
- 6 large eggs from the fridge
- 2 tbsp avocado oil based mayonnaise (or preferred mayonnaise)
- ½ tsp dry mustard
- 1 tsp apple cider vinegar
- ⅛ tsp salt (more to taste)
- Fresh ground black pepper to taste
- ¼ cup of Struesli Savory + Seed
- Boston lettuce cups, wrap or bread of choice
Instructions:
We have 50 chickens, which means that the eggs I use are really fresh and I used to struggle to peel the shells. This method makes peeling them so much easier!
- Add 6 eggs into a medium size pot of gently boiling water.
- Cover and simmer for 10 minutes.
- Turn off the heat and let the eggs sit in the hot water for 5 minutes.
- In the meantime, fill a medium sized bowl with ice water.
- After 5 minutes spoon the eggs into the ice bath for 10 minutes.
- Peel the shells off the eggs and place them into a clean bowl.
- Break the eggs up with a fork until desired consistency and add in mayo, dry mustard, apple cider vinegar, salt and pepper.
- Serve in lettuce cups, wrap or bread of choice sprinkled with Struesli Savory + Seed on top for satisfying crunch. Enjoy!
Tip: Store any leftovers in a glass container with a lid for 3-5 days. It's a great source of protein for a quick snack with veggies or on toasted sourdough.
