ROASTED DELICATA SQUASH WITH CRANBERRY QUINOA STUFFING

Ingredients:
Instructions:
1. Remove the ends of the squash with a chef's knife.
2. Slice the squash into even 1/2-inch rounds.
3. Use a spoon to remove the seeds.
4. Brush with avocado oil.
5. Lay the rings flat on a sheet and bake in a 450°F oven for 15-20 minutes.
6. Add salt and pepper to taste.
Granola Quinoa Stuffing:
1. Rinse and cook 1/2 cup quinoa with 1 cup water, a pinch of salt, and pepper.
2. In a bowl, mix 1 cup cooked quinoa, 1 cup Struesli Granola, 1/3 cup unsweetened dried cranberries, and 2 Tbsp walnut oil.
3. Fill each squash ring with a tablespoon of the mixture.
4. Garnish with fresh cranberries and broccoli sprouts.
5. Drizzle aged vinaigrette on top. Enjoy as a side dish or on its own.
