These addictive cookies remind me of the Magic Cookie bars of my childhood (but more nutrient-dense). They come together quickly with only 5 ingredients. You won’t be able to eat just one! It's a great recipe for novice bakers and a great go-to cookie for seasoned bakers as well. I love that they are grain, gluten, and refined sugar-free yet packed with flavor, healthy fats and fiber. One bowl makes cleaning up easy!
5-INGREDIENT MAGIC COOKIES WITH GRANOLA
Total Baking Time: 25 minutes
Yields 18 cookies
Ingredients:
- 1 cup Large Flaked Unsweetened Coconut
- 1 cup Sliced Almonds
- 1 cup Struesli Original
- ¾ cup Chocolate Chips (Refined Sugar-free)
- ⅓ cup +1 tbsp Condensed Coconut Milk
Instructions:
- Preheat the oven to 350 and line 2 baking sheets with parchment paper.
- In a medium-sized bowl measure all ingredients and gently stir until everything is lightly coated in the condensed coconut milk. (The mixture will be relatively loose.)
- Spoon the mixture onto the parchment into 18 mounds 9 on each pan.
- Bake each sheet for 8-10 minutes until lightly toasted and golden. Allow to cool completely, this is where the magic happens! As they cool they hold together. Enjoy!
Tip: Store in an airtight container in the refrigerator for 4-5 days.
