These easy no-bake treats are not only delicious and gluten-free, they also do a great job at satisfying those mid-day cravings. The satiating fat and fiber in Struesli makes these treats “stealthy healthy”, meaning they are nutritious too! Try swapping Struesli Original for Struesli Cacao + Coffee, or use almond butter (or any nut butter of choice!) instead of peanut butter.
VEGAN CHOCOLATE PEANUT BUTTER CRISPY RICE TREATS

Ingredients:
- 1 cup Chocolate Chips (I used Enjoy Life Brand Dark)
- ½ cup Natural Peanut Butter (only peanuts and salt)
- 1 cup Crispy Rice Cereal
- 1 cup Struesli Original
- Optional Avocado Oil Spray for loaf pan
Instructions:
- Lightly spray a 8 ½ X 4 ½ loaf pan with avocado oil OR Line with parchment paper.
- Melt the chocolate chips in a heatproof bowl over a pot of simmering water. Don’t let the water touch the bottom of the bowl but nestle on top of the pot and allow the heat to slowly melt the chocolate while you stir. This is a double boiler. Alternatively, in a microwave safe bowl heat the chocolate in the microwave in increments of 30 seconds stirring in between until smooth and melted.
- In a large bowl, combine the peanut butter, melted chocolate, crispy rice cereal and Struesli until everything is evenly coated.
- Spread the mixture into the loaf pan and gently press to flatten the top and put in the freezer to set. Wait for about 2 hours, then you can remove the solid chocolate mixture from the pan and cut into snackable treats!
Tip: Store these in an airtight container in the fridge for up to a week or in the freezer for up to a month.
