These light and crispy cookies require little time, little mess and only 2 ingredients (unless you want to get creative!). You can use any Struesli blend you like, they are all grain-free, gluten-free and these cookies are vegan and refined sugar-free too. We love to pair these flavorful and versatile cookies with ice cream on hot summer days!
EASY 2-INGREDIENT GRANOLA COOKIES

Total Time: 10 minutes
Ingredients:
- 2 cups Struesli Granola blend of choice
- ⅓ cup real maple syrup
- Optional add-ons: orange zest, cinnamon, chocolate chips, dried fruit, black sesame seeds
Instructions:
- Preheat oven to 350 degrees and line a baking sheet with parchment paper for easy clean up.
- In a medium sized bowl mix Struesli of choice with maple syrup, divide into even, flattened portions on your baking sheet, about the size of a silver dollar. Sprinkle add-ons here if you wish. You will get about 15 cookies.
- Bake for 6-8 minutes. Allow to cool and enjoy!
Tip: Store in a sealed container in the refrigerator or freezer until ready to serve.
