This quick and easy recipe is proof that indulgence and nutrition can go hand in hand. It starts with a base of orange infused chocolate topped with Struesli Cacao + Coffee which adds crunch and a touch of salt along with pecans, walnuts and cacao nibs. The dried cranberries, apricots and pistachios add additional pops of color and flavor but you can add whatever you might have on hand and make it your own or keep it simple yet deliciously flavorful with Struesli.
Elevated Orange Chocolate Bark With Coconut Flakes
Roughly 20 pieces
Total Time: 20 minutes + 1-2 hours to set
Ingredients:
- 14 oz good quality chocolate (I mix Theo 6 oz dark chocolate with orange and 8oz 70% dark chocolate)
- ½ cup Struesli Cacao + Coffee
- 2/3 cup dried fruit - cranberries, apricots, orange, ginger (optional)
- 1/4 cup pistachios
- ½ cup large flaked coconut
Instructions:
- Start by lining a baking tray with parchment paper and set aside, then roughly chop the pistachios and optional dried fruit if using. Make sure that all these topping ingredients are close by for when you need to sprinkle them on the melted chocolate. Gather all your topping ingredients so they are close by when you are ready to sprinkle them on the melted chocolate.
- Break your chocolate bars into small pieces over a bowl set over a double boiler. A double boiler is a pot with simmering water, one that you can safely set a heatproof bowl on top of. Don’t let it touch the water, it could be too much heat for the chocolate. Gently stir and until 95% melted, then carefully remove the bowl with the chocolate from the pot of simmering water and continue to stir off the heat for it to finish melting.
- Pour the melted chocolate over the parchment lined baking sheet and spread evenly. There will be a border of parchment framing the chocolate. Use a silicone spatula or offset spatula to help evenly distribute, but make sure to leave a border around the baking sheet chocolate-free.
- Sprinkle the Struesli, pistachios, coconut, and then the optional dried fruit evenly over the melted chocolate distributing each. Gently press down lightly with the spatula to nestle everything into it.
- Allow to cool and harden at room temperature for 1-2 hours or in the refrigerator for 15-20 minutes. Once it has set and hardened you can break it into about 20 pieces. Enjoy!
Tip: Store in an airtight container in the refrigerator for a week. Tastes best at room temperature.
