Vegan Granola Bars Packed With Superfoods
8 Granola Bars

Bake time: 35 minutes
Ingredients:
- ½ cup raisins
- ⅓ cup mashed ripe banana
- ½ tsp vanilla bean paste
- ¼ cup almond butter
- 1¾ cups Struesli Original
- 3 tbsp pure maple syrup
- Avocado oil spray
Instructions:
1. Preheat the oven to 325 and line a loaf pan with parchment paper and lightly spray with avocado oil. (mine was a standard 9x5 size).
2. In a large bowl mash the banana with a fork until all the lumps are gone and it looks pureed. Into the same bowl add the raisins, vanilla bean paste, almond butter, Struesli and maple syrup. Stir until well combined.
3. Transfer the mixture into the lined loaf pan and press the mixture firmly into the pan using the bottom of a measuring cup.
4. Bake at 325 for 30-35 minutes or until the edges get brown and toasty. Allow to cool completely in the pan then run a knife around the edges to loosen and lift using the parchment paper on a flat surface cut into 8 granola bars.
Tip: Store in an airtight container in the refrigerator for up to a week.
