This easy version of ice cream using frozen bananas makes a nice base for Struesli Savory + Seed. This wholesome, plant-based treat is dairy-free, nuts-free and contains no refined sugar. Don’t forget, you can also top your favorite ice cream or frozen yogurt with Struesli Original or Cacao+Coffee - Whichever you prefer!
Easy Vegan Banana Ice Cream
3-4 Servings
Ingredients:
- 4 frozen bananas (I peel and slice my overripe bananas and freeze in a single layer on a parchment lined cookie sheet for about 2 hours then use them or store in a container back in the freezer)
- Vegan milk of choice, as needed
- 1 tsp vanilla extract
- ¼ cup Savory + Seed granola (but any flavor of Struesli is delicious)
- Raspberries (optional)
Instructions:
- Remove bananas from the tray and place into the bowl of a food processor fitted with the steel blade.
- Pulse to get things moving and then run until processed and creamy. If you need to add a splash of milk to help move things along you can.
- Stop to scrape down the sides and add in a teaspoon of vanilla extract. Blend for a few seconds longer.
- Scoop and serve immediately top with Struesli Granola and raspberries (or fruit of choice). If you want to save some for later, store the leftovers in a glass bowl with a lid. When you are ready, let it soften at room temperature for about 30 minutes before scooping.
