A SUMMERY PEACH SALAD WITH LOBSTER AND GOAT CHEESE

Prep time 15 minutes
Salad Bowl:
- 4 cups mixed greens
- 1 ripe peach, diced
- ½ large tomato, sliced
- ½ avocado, sliced
- 2 tbsp crumbled goat cheese (optional)
- ½ cup cooked diced lobster or lobster salad
- ¼ cup Struesli Savory + Seed
Lemony Rice Wine Vinaigrette:
- 3 tbsp rice wine vinegar
- 1 tsp fresh lemon juice
- 1 tsp honey
- ¼ tsp salt
- 5 twists of fresh ground black pepper
- 5 tbsp avocado oil
Instructions:
1. To make the vinaigrette, add all ingredients in a wide-mouth glass jar with a lid and shake to combine.
2. In a large shallow bowl, add the mixed greens and toss with a few tablespoons of the vinaigrette.
3. Artfully arrange the peach, tomato, avocado, and lobster salad on top of the greens.
4. Top with crumbled goat cheese, a drizzle of dressing, and Struesli granola.
