Melted dark chocolate is swirled together with dried mulberries - the ultimate superberry - Struesli Original granola, and dried cranberries for a rich base. Dark Chocolate Bites With Cranberries, Mulberries and Tiger Nut-Based Granola

Total Time: 20 minutes and an additional 1 hour to set.
Ingredients:
- 10 oz 70% dark chocolate chips (I used Equal Exchange)
- ⅓ cup chopped dried mulberries
- ¼ cup dried cranberries
- 1 cup Struesli Original (or Struesli Cacao + Coffee!)
- Optional: ½ tsp fresh grated orange zest
Toppings:
- 2 tbsp chopped pistachios
- 2 tbsp chopped freeze-dried raspberries
- 2 tbsp chopped candied ginger
- 2 tbsp cacao nibs
- Optional: nuts, coconut, seeds or other toppings of choice.
Instructions:
- Add mulberries, cranberries, orange zest and Struesli Original to a bowl.
- Melt the chocolate in a heatproof bowl over a pot of simmering water (this is called a double boiler), the bowl shouldn’t touch the water or else it could get too hot and burn the chocolate. Stir with a heatproof spatula until melted, about 5-10 minutes.
- Once the chocolate is melted, pour it into the bowl containing mulberries, cranberries, orange zest, and Struesli granola, and mix it all together.
- Spoon the chocolate mixture into two mini muffin tins lined with liners for easy removal. Top each little treat with desired toppings or a combination of a few and then place them in the fridge to cool and harden.
- They should be set after an hour. You can remove them from the tins and store them in an airtight container in the fridge for up to a week or the freezer for up to a month. I like to eat these at room temperature so I take a few out at a time before you plan to enjoy them.
