When garden-fresh, juicy tomatoes are at their peak, this gluten-free dish makes quick and delicious use of them. Be sure to put a small tomato in the freezer ahead of time - perhaps one that's a little imperfect to ensure it doesn’t go to waste. The frozen, shaved tomato on top adds a cool, refreshing twist. Layer it up as I did here, or assemble it in a bowl or on your favorite toasted bread!
FROZEN TOMATO AND COTTAGE CHEESE STACK WITH A KICK

Prep time: 6-8 hours to freeze tomato
Assembly time: 10 minutes
Ingredients:
- 1 medium to large garden tomato
- 1 small garden tomato for freezing
- 3 leaves fresh basil (parsley, dill, chives work too!)
- ½ cup cottage cheese (we love Good Culture)
- 1-2 tbsp Struesli Savory + Seed
- A pinch of red pepper flakes
- 2-3 tsp extra virgin olive oil
- Optional flaked sea salt to taste
Instructions:
- Place the small tomato in the freezer for at least 6 hours, allowing it to harden.
- Gather all the other ingredients and begin by slicing your larger tomato into thick slices (approximately ⅛ inch, I got 5 good slices out of mine).
- Start layering: tomato slice, a pinch of salt, cottage cheese, red pepper flakes, torn basil, a drizzle of olive oil, and a sprinkle of Struesli Savory + Seed.
- Layer as many as you like this way, ending with cottage cheese, and top with basil, red pepper flakes, olive oil, shaved frozen tomato, and more Struesli granola. Enjoy right away to keep the Struesli crunchy and the shaved frozen tomato refreshingly frozen!
Tip: Switch things up by adding the same ingredients to a bowl or on top of sourdough toast for a quick version of this flavorful and good-for-you snack.
