The Inspiration
"I knew I wanted to create a cashew blend as cashews have always been a favorite of mine, says founder Adrienne. "But cashews are also quite mild in flavor, which made the process more nuanced than I expected. It became less about building something bold, and more about finding the right balance."
The goal for Adrienne was to create something that was classic, comforting, true to everything that Struesli stands for, and quietly irresistible all in one.
"When I landed on the final version of Cashew & Vanilla, I brought it to sample at the Fancy Food Show in New York City. The response was immediate and overwhelmingly positive. People kept coming back for another taste, asking about it, lingering over it. That moment reinforced what I had hoped all along: this is the new classic."
The Main Ingredients
Struesli Cashew & Vanilla features – you guessed it – cashews and vanilla, and also so many of the powerhouse ingredients that you’ll find in any bag of Struesli. Here’s what’s inside:
- Organic Tiger Nuts – this fiber-rich grain-free root vegetable makes up the base of Struesli granola. On the outside, sliced tiger nuts look a lot like oats. They taste mildly naturally sweet and pack a nutrition punch.
- Organic Cashews – this new flavor of Struesli is the first to feature creamy delicious cashews. The toasted cashew halves add texture and smooth, rich, buttery goodness to every bite.
- Organic Coconut – coconut appears in Struesli as sweet coconut flakes, organic extra virgin coconut oil, and organic coconut butter that combine to create depth of flavor, as well as a being a source of medium-chain triglycerides that are more quickly digested than other types of saturated fats and have been linked to appetite control.
- Organic Pumpkin Seeds – these nutritious seeds help round out the flavor profile, adding savory, earthy notes and also a high amount of magnesium, an essential mineral that the body needs for heart health, muscle health, nerve function, and more.
- Organic Hemp Hearts, Chia Seeds, and Golden Flaxseed Meal – are three ultra nutritious seeds that appear in every flavor of Struesli and help boost the nutritional value by contributing fiber, monounsaturated fats including omega 3s, magnesium, and antioxidants.

Cashews are one of the most popular nuts on the planet, sought after for their creamy, rich, naturally sweet flavor and crisp-soft texture. They’re a tree nut native to Brazil and, like other types of nuts, they’re a premium nutrition source, providing a nice mix of protein, fiber, and essential vitamins and minerals like iron, calcium, potassium, zinc, vitamin C, vitamin K, and folate. They’re also rich in monounsaturated fats, which help provide satisfaction and provide cell protection from oxidative stress. The lutein in cashews is also important for eye and skin health.

- Slightly sweeter. None of the flavors of Struesli contain added sugars or sweeteners, which is unique among granola. While the tiger nuts and almonds provide subtle natural sweetness, the cashews and vanilla increase the sweetness on the tongue, making it quite different from eating the Struesli Savory & Seed, for example.
- Indulgent. The addition of cashews and vanilla makes eating this version of Struesli feel rich, creamy, and filling. What’s The Same
Though it’s unique, flavorwise, Struesli Cashew & Vanilla still meets the quality and standards of every other flavor, being:
- Based on tiger nuts. The iconic crispy base of every flavor of Struesli is sliced and toasted tiger nuts. Though often mistaken as a nut or bean, tiger nuts are actually a root vegetable that borrows the best parts, nutritionally, from both nuts and beans – namely the healthy fats and fiber. They provide sustenance, a light and crisp texture, and pleasant natural sweetness.
- Low in carbohydrates. Struesli is a low-carbohydrate food and low on the Glycemic Index, containing just 8 grams of carbs and 0 grams of added sugars per serving, while still dishing up 3 grams of fiber. Due to the low carb and high fiber content, it doesn’t spike blood sugar in the same way other granolas do.
- Without sugars or sweeteners. Unlike other granolas that are based on oats and coated in a sticky, syrupy coating, Struesli is airy and crisp. It doesn’t have traditional sweeteners like brown sugar, corn syrup, honey, or maple syrup. And it also doesn’t have artificial or natural zero-calorie sweeteners, like sucralose, aspartame, allulose, stevia leaf, monkfruit, or erythritol.
- Gluten free and grain free. The magical combination of tiger nuts, nuts, seeds, and coconut create a superfood granola that is also naturally gluten free and grain free. It’s also dairy free, egg free, Paleo and Whole30 friendly, vegan, and free of preservatives and seed oils.
Spotlight On: Vanilla
The organic vanilla bean powder is unique to this new version of Struesli and contributes an iconic flavor that pops and complements every other ingredient in the mix.
