Struesli has worked closely with registered dietitian Jessie Shafer since before it even existed! Learn more about Jessie and what a registered dietitian does.
Struesli's Dietitian
Jessie Shafer, RD, has worked closely with founder Adrienne and the Struesli team since early 2022, before Struesli was even a product you could buy! Jessie sampled many early versions of Struesli and worked with the team to identify Struesli's unique formulation, suggested serving size, health benefits, and nutrition content. Jessie creates expert-written health content for Struesli and represents the brand in the media and at trade shows.
Becoming A Registered Dietitian-Nutritionist
Fresh out of graduating with a B.S. in Journalism from Northwestern University, Jessie left Chicago and returned to her hometown where she married her high school sweetheart and began her media career.
As a young journalist working for an Iowa-based cookbook publisher, Jessie quickly gained an interest in learning more about nutrition and the impact of certain ingredients on the body. As she wrote and researched cookbooks, Jessie often interviewed registered dietitians, chefs, and other food experts. In 2008, Jessie began to pursue a long road to becoming a registered dietitian herself, a credential she thought would complement her journalism degree well, while she continued to work in publishing full time.
Jessie's career continued from book publishing to magazines, where she climbed the ranks from associate editor to nutrition editor to senior editor to editor-in-chief. She finished the science curriculum she needed in order to become a registered dietitian by taking courses during her lunch breaks and in the evenings. She would develop recipes and write articles for the health brands she worked for, then run off to dissect animal organs and study the periodic table, then return to work to edit and research more articles. Jessie's work-school life continued like this for seven years until she had gained all the prerequisites she needed in order to gain a dietetic internship with Wellness Workdays DI out of Boston. Jessie then spent the next seven months working in hospital clinics, cancer clinics, food service, long-term care, and corporate offices. She sat for (and passed!) the national board exam to become a registered dietitian in 2014.

Registered Dietitians Love Struesli
One of the first groups of people to ever taste Struesli was registered dietitians! Before Struesli officially launched, Jessie and the Struesli team exhibited at the 2022 Food & Nutrition Conference & Expo in front of an audience of hundreds of registered dietitians. They were overjoyed by the reaction and quick acceptance that dietitians had for this new grain-free granola powered by so many nutritious ingredients, like tiger nuts. Dietitians loved that Struesli doesn't contain any added sugars or added sweeteners, like stevia, monkfruit, or erythritol. They also loved that Struesli is such a good source of dietary fiber, prebiotics, and healthy fats. Today, dietitians continue to love Struesli and recommend it often as a better alternative to granola and other sweet toppers.
Jessie loves to enjoy Struesli in many ways. One of her favorites is to top lemon yogurt with the Struesli Cacao + Coffee flavor. She also loves to sprinkle Struesli Original over a cottage cheese bowl or an avocado toast.
